Cocido Madrileno Recipe

Ingredients: 

8oz chick peas soaked overnight
½ boiling chicken
1 lb lean brisket of beef in one piece
8oz lean smoked bacon knuckle
1 bay leaf
4oz morcilla or other blood sausage
8oz chorizo sausage
½ bulb of garlic, unpeeled, cloves unseparated
1 large onion, roughly chopped
½ small cabbage, coarsely shredded
2 carrots quartered
Whites of 2 leeks with some of the green part, chopped
2 large potatoes, in chunks
salt and pepper

Method: 

1. Rinse the chickpeas and tie them loosely in a muslin bag. Put them into a very large pot with the chicken, beef, bacon and the bay leaf. Cover with water, bring to the boil, skim, then simmer, partially covered, for 1 ½ hours

2. Add the sausages and garlic head and cook gently for 30 minutes, keeping the pot topped up with boiling water all the time

3. Add the onion, cabbage, carrots, leeks and potatoes and continue to simmer for about 30 minutes or until vegetables, chickpeas and meat are all tender. Add pepper to taste and, if wished salt, but be sparing as the bacon may be quite salty anyway

4. To serve, discard the bay leaf, the garlic head and the knuckle bone. Carefully transfer the chicken, the beef and the sausage to a carving board and cut them into neat slices. Arrange them on a heated serving dish. Remove the chickpeas from the muslin bag and pour them in a mound in the centre of another large heated dish. Surround the chickpeas with the rest of the vegetables and serve immediately
