Ingredients:
50g (2oz) soft margarine
50g (2oz) caster sugar
1 egg, beaten
50g (2oz) self raising flour
1.25 ml (¼ level teaspoon) baking powder
1 ripe banana, peeled and mashed
125g (4oz) icing sugar, sifted
about 15ml (1 tablespoon) orange juice
red glace cherries
Method:
1. Put the margarine, sugar, egg, flour and baking powder in a food processor and process until smooth and well mixed. Add the banana and process for 1 minute.
2. Put a teaspoon of the mixture into about 36 small petit fours cases. Arrange the filled cases on a baking sheet and bake in the oven at 190°C (375°F) gas mark 5, for about 12 - 15 minutes or until golden brown. Cool on a wire rack.
3. When the buns are cold, make the glace icing by mixing the icing sugar with the orange juice until smooth and just thick enough to coat the back of a spoon. Top each bun with a small blob of icing and stick half a cherry onto each. Leave to set.
