Simple Children's Recipes - Carrot Cake

Ingredients:

8oz (225g) butter

8oz (225g) light soft brown sugar

4 eggs, separated

finely grated rind of ½ orange

4 teaspoon (20ml) lemon juice

6oz (175g) self raising flour

1 level teaspoon (5ml) baking powder

2 oz (50g) ground almonds

5oz (150g) walnut pieces, chopped

12 oz (350g) young carrots, peeled and grates

8 oz (225g) cream cheese

10ml (2 level teaspoon) clear honey

Method:

1. Grease and line a deep 8 inch (20cm) round cake tin.

2. Cream the butter and sugar together in a bowl until pale and fluffy. Beat in the egg yolks, then stir in the orange rind and 15ml (3 teaspoon) of the lemon juice.

3. Sift in the flour and baking powder, then stir in the ground almonds and 4oz (125g) walnuts.

4. Whisk the egg whites until stiff, then fold into the cake mixture with the carrots. Pour into the prepared tin and hollow the centre slightly.

5. Bake at 180°C (350°F) gas mark 4, for about 1½ hours. Cover the top with foil after 1 hour if it starts to go brown.

6.Leave to cool slightly, then turn out onto a wired rack and removing the lining paper. Leave to cool.

7. To make the topping, beat together the cream cheese, honey and remaining lemon juice and spread over the top of the cake. Sprinkle the topping with the remaining walnuts to decorate.
