Simple Children's Recipes - Beef Stew and Dumplings

Ingredients:

1 ½ lb (700g) stewing steak, cut into cubes

1 tablespoon (15 ml) plain flour

2 oz (50g) dripping or lard

3 medium onions, diced

1 lb (450g) carrots, diced

450g - 550g (1 - 1¼ lb) potatoes, peeled and diced

4 celery sticks, diced

1 pint (600ml) beef stock

salt and pepper

3 medium tomatoes, quartered

1 teaspoon (5ml) dried mixed herbs

1 tablespoon (15ml) tomato puree (optional)

For the dumplings:

8oz (225g) self raising flour

pinch of salt

3oz (75g) margarine

Method:

1. Put meat in a plastic bag with the flour and shake until coated. Heat the dripping or lard in a large saucepan, add the meat and cook until browned. Remove the meat from the pan with a slotted spoon.

2. Add the onions, carrots potatoes and celery to the pan and fry for about 5 minutes until lightly browned.

3. Remove the pan from the heat and add the stock, seasoning, tomatoes, herbs and tomato puree (if using). Return the meat to the pan, bring to boil, cover, reduce the heat and simmer gently for 2 hours.

4. To make the dumplings, put the flour and salt in a bowl, add the margarine and rub in until the mixture resembles fine breadcrumbs. Gradually mix in 75-90 ml (5-6 tablespoons) water until the mixture forms a light, elastic dough. Turn onto a floured surface and knead lightly. Cut the dough into eight pieces and roll each into a ball.

5. Arrange the dumplings on top of the stew, re-cover and continue cooking for a further 20 - 25 minutes.
