Simple Children's Recipes - Apple Soufflé

Ingredients:

350g (12oz) cooking apples

50g (2oz) butter or margarine

25g (1oz) caster sugar

30ml (2 level tablespoon) plain flour

150ml (¼ pint) milk

3 eggs, separated

30ml (2 tablespoon) apple juice

icing sugar, for dusting

cream for serving (optional)

Method:

1. Lightly grease six 150ml (¼ pint) ramekin dishes. Dust them out with icing sugar.

2. Peel, quarter, core and roughly chop the apples. Place in a small saucepan with 25g (1oz) of the butter and the sugar. Cover tightly and cook gently until the apples are very soft. Uncover and cook over a moderate heat, stirring frequently until all excess moisture evaporates. Mash or beat until smooth; cool slightly.

3. Melt the remaining butter in a pan, add the flour and cook for 2 minutes. Remove from the heat and stir in the milk. Cook, stirring, for 2 - 3 minutes until thickened.

4. Remove from the heat, cool slightly, then stir in the apple purée and egg yolks. Gently mix in the apple juice. Whisk the egg whites until stiff but not dry. Stir one large spoonful into the apple mixture, then gently fold in the remaining egg whites. Divide between the prepared ramekin dishes so that each is three quarters full.

5. Bake in the oven at 180°C (350°F) gas mark 4 for about 30 minutes or until just set and golden brown. Dust
