Grease the surface you will be working on (marble chopping board or baking tray is best), and any utensils you will be using, with vegetable oil.You will need:
caster sugar, water, fruit, heavy based saucepan, thermometer, glass
measuring jug, marble chopping board, baking tray, sharp knife, biscuit
cutters, skewers and lolly sticks, scissors
Basic Recipe:
Place 1lb of caster sugar into a heavy based saucepan. Add fruit puree or fruit juice, and top up to 200ml with warm water. Stir to dissolve.
Boil rapidly without stirring, until the syrup reaches 146°c, (295°f). Remove from the heat and plunge the saucepan into cold water until the bubbling subsides.
Tangy twists
For lemon flavour, place the finely grated rind of two lemons in a measuring jug and top up to 7 fl oz (200ml) with warm water. Then stir into caster sugar as above.
Grease a sharp knife and a marble chopping board with cooking oil. Pour out a pool of the lemon caramel and allow it to set. When still malleable, cut into strips.
Take each strip as you cut it and wind it around a wooden skewer. Set aside the twists to cool and harden. Soften remaining caramel over a gentle heat.
Strawberry sweets
Same as above but omitting the lemon juice replacing with 4 oz (100g) fresh or frozen strawberries, in a purée that has been pressed through a sieve.
Pour out a pool of caramel. When it is cool enough to handle, roll it up into a rope. Stretch it, fold over and then pull out again. Repeat until it is opaque.
To make the cushions, use a sharp pair of scissors to cut the rope at an angle. After each cut, rotate the rope 90° and then cut it again.
Fun Lollies
You can use any flavour to make these lollies. We have substituted the above recipe with raspberries.
Brush the biscuit cutters with cooking oil and place on a greased tray. Fill each shape with caramel to a depth of about 5mm. Leave for 5 minutes.
Carefully lift off each biscuit cutter and lay a wooden lolly stick on each shape and press lightly into position. Leave for at least half an hour to set.
